Ingredients

  • 3 ½ cups (440g) all-purpose flour (or bread flour for extra chew)

  • 1 tsp (5g) salt

  • 1 tbsp (12g) sugar (or honey)

  • 1 ¼ cups (300ml) warm water (about 110°F/45°C)

  • 2 tbsp (30ml) olive oil (plus extra for greasing)

  • *If using active dry yeast, dissolve it in warm water with sugar first and let it foam for 5-10 minutes before mixing.

Directions

  • Mix Dry Ingredients: In a large bowl, whisk together flour, yeast, salt, and sugar.
  • Add Wet Ingredients: Make a well in the center, then pour in warm water and olive oil. Stir with a wooden spoon until a shaggy dough forms.
  • Knead the Dough: Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic (or use a stand mixer with a dough hook for 3-4 minutes).
  • First Rise: Lightly grease the bowl with olive oil, place the dough back in, and cover with a damp towel. Let it rise in a warm spot for 1-2 hours, or until doubled in size.
  • Shape the Dough: Punch down the risen dough, divide into two balls, and roll/stretch into your desired pizza shape (thin for crispy, thicker for chewy).
