Ingredients

  • 2 tablespoons olive oil

  • 1 lb beef stew meat (chuck or round), cut into bite-sized pieces

  • Salt and pepper, to taste

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 4 cups beef broth

  • 1 cup red wine (optional, but adds depth of flavor)

  • 3 medium carrots, sliced

  • 3 medium potatoes, peeled and diced

  • 1 cup frozen peas

  • 1 tablespoon tomato paste

  • 2 teaspoons dried thyme

  • 1 bay leaf

  • 1 tablespoon flour (optional, for thickening)

  • Fresh parsley, chopped (for garnish)

Directions

  • Prepare the beef: Heat olive oil in a large pot over medium-high heat. Season beef chunks with salt and pepper, then add them to the pot in batches to avoid overcrowding. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.
  • Sauté the veggies: In the same pot, add chopped onion and garlic. Sauté until softened and fragrant, about 3-4 minutes. Stir in the tomato paste and cook for an additional minute.
  • Deglaze the pot: Pour in red wine (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes to reduce slightly.
  • Add the broth and seasonings: Return the beef to the pot. Add beef broth, thyme, and bay leaf. Stir to combine. Bring to a boil, then reduce the heat to low. Cover and let simmer for 1 hour, stirring occasionally.
  • Add the vegetables: Add the carrots, potatoes, and frozen peas to the pot. Stir everything together, cover, and simmer for another 30 minutes or until the vegetables are tender.
  • Thicken the stew (optional): If you prefer a thicker stew, mix 1 tablespoon of flour with a little water to form a slurry. Stir this into the stew, then let it simmer for an additional 5-10 minutes to thicken.
  • Final touches: Remove the bay leaf. Taste and adjust seasoning with salt and pepper. Garnish with chopped fresh parsley before serving.

Tips & Tricks:

  • For extra flavor, marinate the beef in a bit of red wine, olive oil, and herbs for a few hours before cooking.
  • Substitute root vegetables like parsnips or turnips if you want to switch up the flavors.
  • For a gluten-free version, skip the flour thickening and enjoy the broth as is.
  • Make it spicier by adding a pinch of red pepper flakes or cayenne pepper to the broth.
