Directions

  • Prep the Chicken: Place chicken breasts between plastic wrap and pound them to an even ½-inch thickness using a meat mallet or rolling pin.
  • Season & Dredge: In a shallow dish, mix flour, salt, and pepper. Lightly coat each chicken breast in the flour mixture, shaking off excess.
  • Sear the Chicken: Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Cook chicken for 3-4 minutes per side until golden and cooked through. Transfer to a plate and cover to keep warm.
  • Make the Sauce: In the same skillet, add white wine, scraping up any browned bits. Let it simmer for 2 minutes until slightly reduced. Stir in chicken broth, lemon juice, and capers. Cook for another 2 minutes.
  • Finish the Dish: Reduce heat to low and swirl in the remaining 1 tbsp butter until the sauce thickens slightly. Return chicken to the pan, spooning sauce over it. Garnish with parsley and lemon slices.
